Good Sunday Morning! I started doing this some months back and it seemed to be a hit, then life happened and I got away from it. I ran across this recipe the other day and decided it would be a perfect candidate to start again. And if you hang around for long, you'll learn that I have a huge sweet tooth. :-)
So, let's make some Coffee Crumb Cake!
First, you make the crumbs.
Melt your 1 cup (2 sticks) of butter in a bowl, add the vanilla and almond extracts (I often don't have almond extract, so I just leave it out and add a little more vanilla. In a separate bowl, whisk together the flour, sugar, salt, cinnamon.
Pour the dry ingredients into the butter and mix. I usually stir it up really good with a spoon, then break it up in to smaller crumbs with a fork before I put it on the cake.
This is what it will look like once it's all mixed up. You can see why I use a fork to break it up before I put it on the cake. Just set this aside while you make the cake.
Now, for the cake.
Mix your 1 stick of butter and sugar till light and fluffy. Add the eggs one at a time, beating after each addition.
Mix in the vanilla and sour cream.
Then it's time for the dry ingredients. Flour, baking soda, salt and baking powder. Mix until evenly combined, then pour in to your greased 9 x 13 baking pan.
And this is what you'll have. Now it's time for the crumbs. :-)
Break them up with a fork, so you have smaller, more uniform crumbs. And spread it over the cake.
Bake for 30-35 minutes, or until a toothpick comes out clean. My oven did it perfectly in 30 minutes. Remove and let cool on a wire rack.
I baked mine up last night so we could have a quick bite before church this morning. YUM!

Coffee Crumb Cake
Crumbs:
2 1/2 cups all purpose flour
1 1/4 cups sugar
1/2 tsp salt
1 1/2 tsp cinnamon
1 cup (2 sticks) butter, melted
1 tsp vanilla extract
3/4 tsp almond extract
Cake:
8 TBS (1 stick) butter
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 cup sour cream
2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
Preheat oven to 350. Grease a 9x13 pan generously.
In a medium sized mixing bowl, whisk together the flour, sugar, salt and cinnamon. Melt the butter in the microwave and add the extracts to it. Pour the butter into the flour mixture and mix until all the butter is absorbed and you have a uniformly moistened crumb mixture. Set aside while you make the cake batter.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, and beat between additions. Scrape down the mixing bowl, then beat in the vanilla and sour cream. In a medium sized bowl, whisk the flour, baking soda, salt, and baking powder together. Add to the butter/sour cream mixture, mixing until evenly combined. Pour the batter into the greased baking pan. Crumble the crumb mixture over the top until the batter is completely covered. Bake for 30-35 minutes, until a toothpick inserted in center comes out clean. Cool on a wire rack.
